The Elegance of Mastered Bistronomy

After years of sharing his passion with chefs and professionals, Jan Verhaert held a simple yet powerful desire: to host. To welcome guests. To bring his cuisine to life in his own home.

This vision became a reality with Monsieur V, set in a former village bistro transformed into a warm and unique dining house. The space has found its balance between original charm and soft modernity. Natural light, light wood, clean lines, and an open kitchen at the heart of the room: everything breathes serenity and coherence. On sunny days, the front and back terraces extend the experience in a peaceful atmosphere, far from the urban rush.

On the plate, Jan Verhaert’s signature is clear. It is a cuisine of ingredients, of seasons, of precision. The terroir is respected, and classics are intelligently revisited without ever being distorted. This is elegant, sincere bistronomy, built on balance rather than showmanship.

The starters set the tone: Veal cheek with Namur "petits gris" snails and herb jus; Trout quenelle with crayfish and Nantua sauce; or Artichoke mille-feuille with truffles and potatoes.

The main courses confirm the direction: Salmon puff pastry with buckwheat, spinach, mushrooms, and miso beurre blanc; Morel and parmesan risotto; Veal rump with crispy chicory and Madeira jus; or Veal sweetbreads with morels and pommes dauphines.

To finish, the desserts arrive with lightness: Eclair with crème diplomate and hazelnut praliné; French toast (brioche perdue) with fig and Génépi sorbet; or matured cheeses from Laurent Wathelet.

The cellar reflects the chef's personality: open, vibrant, and consistent. From great terroirs to more "liberated" wines, featuring real choices and convictions. Among recent favorites, La Rosine (Syrah by Stéphane Ogier) stands out as an obvious choice.

Everything here is homemade and thoughtfully prepared without pretense: sauces, bread from a local artisan, carefully sourced products, and precise techniques. Monsieur V has naturally established itself as a benchmark address—a fair, living, and coherent house that stands the test of time without ever forcing its style.
