Just steps from Mons’ Grand Place, a well-known house with a distinctive façade began a new culinary chapter in the spring of last year. Formerly Le Comptoir de Marie, this iconic venue has been taken over by the talented chef Céline François, who has given it a new identity under the name L’Instant C.

Having honed her skills in renowned establishments such as Couvert Couvert in Leuven and l’Origines with her neighbour Céline Moustier, Céline brings a modern vision to L’Instant C. Here, the focus shifts from the classic starter-main-dessert format to a culinary journey of discovery and authentic flavours.

A counter close to the chef

One of the unique features of the place is its central counter, where Céline François cooks right in front of her guests. This setup encourages direct interaction, making the experience more vibrant and personal. Diners can observe the precision of each gesture, chat with the chef, and learn the story behind each dish.

On the menu today: fried egg yolk with watercress cream and green lentils; escabeche mackerel with plum carpaccio, fresh almonds and elderflowers; lobster ravioli with bisque, pistachios and tomato; Beef Wellington with Provençal stuffing, rosemary jus and bresaola; caramelised veal shank with meat jus, fresh pasta and courgettes; John Dory with tagetes oil, peas and broad beans in a ginger and lemongrass broth; and a pavlova with strawberries and black sesame praline cream.
