Facing the Braine-l’Alleud train station, Poivre Noir has held a special place in the Brabant culinary landscape for twenty years. Two decades of a well-mastered journey, driven by the exemplary partnership between Jean-Louis Marchal in the kitchen and Christelle, his indispensable partner in the dining room.
Before setting down his knives here twenty years ago, Jean-Louis Marchal had already forged his expertise. Backed by nearly thirty years in the trade, including almost two decades at the legendary Ogenblik in Brussels, the chef relies on an immense culinary memory. But at Poivre Noir, twenty years of history have never meant routine. On the contrary: every service continues to fuel the desire to explore, push boundaries, and surprise without ever losing sight of the essentials.
For 20 years, the menu has remained a living canvas, guided by local markets, tides, and the flow of the seasons. The chef infuses it with his memories, encounters, and a genuine passion for peppers from around the world, which he sprinkles throughout his creations: from the freshness of a mountain pepper on Scottish salmon to the character of a Phu Quoc pepper elevating veal kidneys, as well as Lampong black pepper or smoked berries on a fine cut of beef.
In the dining room, Christelle has embodied the soul of the restaurant for two decades. Around the bar, where carefully selected bottles are displayed, she orchestrates an attentive and balanced service, making every meal a warm and authentic experience.
