In the Louvain equivalent of Brussels’ rue des Bouchers, you only have to seek out one place, thanks to us. We’re big fans of Kwinten de Paepe – an engaging man and a fine cook. He loves the things that give us pleasure and it’s a pleasure to share a table with him. The place is small enough, with seating for only about twenty and the Trente’s menu, deliberately short, is a happy indication of what he’s capable of…
Kwinten’s way of working is clear, and he stays loyal to it: with each dish he wants to tell a story, logically and sincerely; there’s no question of seeking things out for the sake of it, no hedging his bets - just sincere creations. He has applied this attitude to the little (size wise) place he took over in order to have his own place before he turned thirty, hence the name he gave it. We like this place with its clarity of produce. Perfecting cooking times and a balanced diet are also respected to the letter here – and punctuated by a selection of remarkable wines.
