We're almost in France. Beneath the ancient vaulted ceiling of an 18th century priory, at the heart of the village of Solre-Saint-Géry, on the toe of the Hainaut boot, you can find the one of the great talents of Belgian cooking. This sacred place lay unused until Vincent Gardinal revived it, breathing life into it with his gourmet panache and genial creativity, and it found its rightful place in gastronomy's top echelons.
The talented Mr Gardinal lives for cooking and all that goes with it. A stickler for quality produce, he avoids both banality and sophistication. Sensitive and curious, he finds just the right cooking times, harmonizes the ingredients, plays with form and colour, liberates the flavours and doesn't let up until everything is perfect.
This restored listed space is adorned with fresh colours, aided by touches of real class in the blend of stone and marble, its walls draped in ivy.
The ultimate pleasure would be to dine here then stay in one of the superb rooms. This is clearly a fine venue.
