And Nature has arrived in all its splendour when it comes to the food you’ll taste. This is a return to true flavours, respecting the rhythm of the seasons, applying knowhow in the choice of quality produce… the Chef resolutely offers up artisanal dish so typical of the area, such as the Ardennes ham smoked à l'ancienne, producing precise creations which play with contrast, rejecting pointless sophistication - all of which translates into cooking that is fresh, original and inventive.
