Encounters, friendship and talent.
They say life is made of beautiful encounters and we would second that. And Stéphane Chermanne and Geoffrey Monturier must surely agree.
Their stories each had their own course. Stéphane, the cook, served his time in the finest places such as Le Gastronome in Paliseul, le Sanglier des Ardennes in Durbuy and also Comme chez Soi in Brussels before becoming second to Joël Durieux at Saint-Germain des Prés when it was at its best.
Geoffrey, the sommelier, uncorked the finest bottles at l’Auberge de La Grappe d’Or in Torgny before becoming maître d’hôtel at the renowned Restaurant Gérard in Nieuport, then at the hotel-restaurant in the Vieux Château of Wiltz in Luxembourg before arriving at Saint-Germain des Prés. From their complicity in work has sprung a strong friendship and their dynamism has fuelled their desire in what can rightly be called their craft-passion. Happy coincidences led them finally to a perfect fit, a place out of the ordinary… and L’Etang Bleu was born!
Their vision is at once subtle and lucid - this is cooking that seeks out taste, emotions, sensations, colour, this is food for life which is delicately underlined by a wine selection which respectfully finds the right balance between commonsense and the sensibilities of the grape. For us this is an address that already stands out.
