L'Art de Vivre

L'Art de Vivre is nestled in the heart of one of the prettiest places of this spa town, hidden behind the walls of a magnificent red brick 19th century house. This is where Douffet Karine Jean-Francois Roche, Xavier Fissette and their team perform their wonders, spoiling the gourmet guest, whether local or transient, with a cuisine which is sincere and where taste clearly reigns supreme. There is no showing off here; we are dealing with authenticity, with honest, good food. We can cite as evidence creations such as foie gras au torchon, quince confit served in its own syrup, crispy gingerbread, home-made brioche, freshly harvested Oysters, slightly minty Isigny cream, flavoured with hazelnut oil, herring roe, grilled King crab, green apple sorbet and lime, crisp celeriac and radish shavings on a carpaccio of pickled beets and vanilla, or to complete this course try the delicate cod loin, salsify purée, wild mushrooms and pork rinds with salted butter, spinach coulis. The place to be in Spa, obviously.
