Pioneering and insightful, sommelier Dimitri Walhin now offers an innovative wine concept to the Coq aux Champs' visitors. The wine menu is in itself a beautiful object, red and white, in a square format, printed on both sides—an invitation to try new vinous paths, to venture beyond the same old labels.
Classified by region, the new Champs du Coq wine list focuses mainly on the discovery of the character and taste of local wines, a new approach which reflects the spirit of the chef and his way of working. It took a whole year to arrive at this unique classification—it's daring without in the least upsetting guests, since for Christophe Pauly respect for produce and respect for the client make a very happy couple that should never be broken up.
