L’Alban Chambon

L’Alban Chambon is the restaurant housed in one of the most prestigious hotels in Brussels, the Hotel Métropole. Christened Alban Chambon after the French architect who designed the hotel at the end of the 19th century, the restaurant has been home for twenty years to a passionate man, Dominique Michou. Faithful in his collaborations and in his convictions, he treads the path of excellence with brio, a route traced since his early days in gastronomy, inspired by his passion for the land and the produce it offers. For two decades he has maintained his tables with a certain grandeur in one of the few hotels to house a restaurant in Brussels. Unlike Paris, Brussels i s very bad at supporting hotel restaurants – and I think it’s to the city’s detriment.
As well as the pleasure of eating in such an exceptional neo-Baroque location where the space between the tables allows for privacy and where the stylish service approaches perfection, Dominique Michou’s food is all about the produce, served in a classical fashion, some say. We think its cooking with a foundation that is infinitely well mastered while still leaving space for superb élans of modernity without the swashbuckling. This is an institution to be (re)discovered without delay, no doubt about it.
